Creamy Chipotle Refried Beans Instant Pot
Enjoy the rich and smoky flavor of these creamy chipotle refried beans made effortlessly in the Instant Pot. Perfect as a side dish or a filling for burritos and tacos.
Ingredients:
- 2 cups dried pinto beans, rinsed and sorted
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 cups vegetable broth
- Salt and pepper to taste
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
Instructions:
In the Instant Pot, mix together chopped onion, minced garlic, chipotle peppers, ground cumin, and chili powder
Fill the beans all the way to the top with vegetable broth
Lock the Instant Pots lid in place
Place the vent so that it seals
After cooking on high pressure for 45 minutes, let the pressure drop naturally for 15 minutes
Then, quickly let go of any remaining pressure
Cover the pot carefully and open the lid
Add salt and pepper to taste, then use a potato masher or immersion blender to make the beans creamy
Add lime juice, chopped cilantro, and sour cream
When you serve it hot, you can add more cilantro and sour cream on top if you like
