Asparagus Stuffed Shells

Asparagus Stuffed Shells are made by stuffing fresh asparagus with creamy ricotta and tangy marinara sauce into big pasta shells and baking them until they are just right. Its a fun take on traditional stuffed pasta dishes and would be great for a cozy dinner at home.

Ingredients:

  • 1 pound jumbo pasta shells
  • 1 bunch asparagus, trimmed and chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions:

Preheat the oven to 375F 190C

Cook the pasta shells according to package instructions until al dente

Drain and set aside

In a large skillet, heat olive oil over medium heat

Add minced garlic and saut for 1-2 minutes until fragrant

Add chopped asparagus to the skillet and cook for 3-4 minutes until slightly tender

Season with salt and pepper

In a mixing bowl, combine ricotta cheese, Parmesan cheese, and cooked asparagus

Mix well

Stuff each cooked pasta shell with the asparagus and cheese mixture

Spread a thin layer of marinara sauce on the bottom of a baking dish

Arrange the stuffed shells in the baking dish

Top the shells with remaining marinara sauce and sprinkle shredded mozzarella cheese over the top

Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly

Remove the foil and bake for an additional 5-10 minutes until the cheese is golden brown

Serve hot and enjoy
