Slow Cooker Pork Posole
This Slow Cooker Pork Posole is a hearty and tasty Mexican soup made with hominy, tender pork, and fragrant spices. This is a great dinner for a cold day.
Ingredients:
- 2 pounds pork shoulder, trimmed and cut into 1-inch pieces
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cans 15 ounces each white hominy, drained and rinsed
- 1 can 14
- 5 ounces diced tomatoes, undrained
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Salt and black pepper, to taste
- 2 dried ancho chiles, stemmed and seeded
- 1/4 cup chopped fresh cilantro, for garnish
- Lime wedges, for serving
Instructions:
Put the hominy, diced tomatoes, oregano, cumin, salt, and pepper in a slow cooker
Add the onion and garlic
You can put dried ancho chiles in the slow cooker
On low heat, cook for 6 to 8 hours, or on high for 3 to 4 hours, until the pork is soft
After cooking, take out the ancho chiles and throw them away
Serve the posole hot with lime wedges and chopped cilantro on top
