Banana Oat Pancakes
You can start your day off right with these healthy and tasty gluten-free banana oat pancakes. Theyre light and fluffy, sweet from the fruit, and full of protein and fiber. Great for a cozy breakfast in the morning
Ingredients:
- 2 ripe bananas
- 1 cup gluten-free rolled oats
- 2 eggs
- 1/2 teaspoon gluten-free baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/4 cup almond milk
- 1 tablespoon honey optional
- Fresh berries and maple syrup for topping
Instructions:
Put the rolled oats, eggs, baking powder, vanilla extract, cinnamon, almond milk, and honey if you want into a blender
As you blend, keep going until the mixture is smooth, like pancake batter
Place a nonstick griddle or skillet over medium-high heat and lightly coat it with oil or cooking spray
To make pancakes, pour a ladleful of the batter onto the pan
Cook for two to three minutes, or until bubbles appear on top
Flip and cook for one to two more minutes, or until golden brown
Take the pancakes out of the pan and do it again with the rest of the batter
Add some fresh berries and maple syrup to the pancakes with banana and oats
