Vegan Crispy Burger
This vegan crispy burger is full of healthy foods like sweet potato, spinach, lentils, and quinoa. Its a tasty and filling plant-based meal option.
Ingredients:
- 1 cup cooked lentils
- 1 cup cooked quinoa
- 1 cup mashed sweet potato
- 1 cup chopped spinach
- 2 tablespoons chopped fresh herbs such as parsley, cilantro, or basil
- 1/2 cup breadcrumbs
- Salt and pepper to taste
- Oil for frying
- Burger buns and toppings of your choice
Instructions:
In a large bowl, mix together the cooked lentils, quinoa, mashed sweet potato, chopped spinach, chopped herbs, breadcrumbs, salt, and pepper until well combined
Form the mixture into burger-sized patties
Heat oil in a skillet over medium heat
Fry the patties in the skillet until crispy and golden brown on both sides, about 4-5 minutes per side
Remove the patties from the skillet and drain on paper towels to remove excess oil
Assemble the burgers on buns with your favorite toppings such as lettuce, tomato, avocado, onion, and condiments
