Slow Cooker Buffalo Chicken Mac and Cheese
With tender chicken, spicy buffalo sauce, creamy cheese, and tangy ranch dressing, this slow cooker buffalo chicken mac and cheese is a tasty take on a classic comfort food.
Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup buffalo sauce
- 2 cups chicken broth
- 1 cup milk
- 1/2 cup ranch dressing
- 2 1/2 cups uncooked elbow macaroni
- 2 cups shredded cheddar cheese
- 1/4 cup blue cheese crumbles optional
- Salt and pepper to taste
- Chopped green onions for garnish optional
Instructions:
Put chicken chunks, buffalo sauce, chicken broth, milk, and ranch dressing in a slow cooker
Leave the lid on and cook on low for 4 to 5 hours or high for 2 to 3 hours, until the chicken is fully cooked
Add elbow macaroni that hasnt been cooked yet, stir, cover, and cook on low for another 30 minutes, or until the macaroni is soft
Add blue cheese crumbles and shredded cheddar cheese and mix well until the cheese melts
Add pepper and salt to taste
If you want, you can add chopped green onions as a garnish before serving
