Gluten-Free Quinoa Spring Rolls with Spicy Peanut Sauce

These gluten-free quinoa spring rolls are light, refreshing, and packed with vibrant flavors. The combination of quinoa, crunchy vegetables, and aromatic herbs wrapped in delicate rice paper makes for a perfect appetizer or light meal. The spicy peanut sauce adds a delicious kick that complements the freshness of the rolls.

Ingredients:

  • 8 rice paper wrappers
  • 2 cups cooked quinoa
  • 1 red bell pepper, julienned
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup chopped peanuts
  • 1/4 cup gluten-free soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon sriracha sauce
  • 2 tablespoons peanut butter
  • 1 clove garlic, minced
  • 1 tablespoon lime juice

Instructions:

Prepare all the vegetables and set aside

In a small bowl, whisk together gluten-free soy sauce, rice vinegar, maple syrup, sriracha sauce, peanut butter, minced garlic, and lime juice to make the spicy peanut sauce

Set aside

Fill a large shallow dish with warm water

Dip one rice paper wrapper into the water for about 15 seconds until it softens

Lay the softened wrapper flat on a clean surface

Arrange a small handful of quinoa and a few strips of each vegetable in the center of the wrapper

Sprinkle some cilantro leaves and chopped peanuts over the vegetables

Fold the sides of the wrapper over the filling, then tightly roll it up, similar to a burrito

Repeat with the remaining wrappers and filling ingredients

Serve the spring rolls with the spicy peanut sauce for dipping
