4th of July Ice Cream Sandwiches
These 4th of July Ice Cream Sandwiches are a delightful treat to celebrate Independence Day. With a refreshing mix of blueberry ice cream and fresh strawberries sandwiched between two chocolate chip cookies, theyre perfect for any festive gathering.
Ingredients:
- 2 cups vanilla ice cream
- 1 cup blueberries
- 1 cup strawberries, diced
- 8 chocolate chip cookies
Instructions:
Set the vanilla ice cream out at room temperature for five to ten minutes to soften
Put the softened ice cream and blueberries in a bowl and mix them together until they are well mixed
Place 4 cookies on a baking sheet that has been lined with parchment paper
Cover every cookie with a thin layer of the blueberry ice cream mixture
Put strawberry chunks on top of the ice cream
To make sandwiches, put the last four cookies on top of the strawberries
Put a piece of plastic wrap around each sandwich and freeze them for at least two hours, or until they are firm
Unwrap the sandwiches and serve them right away once they are firm
