Lemon Raspberry Crepe Cake
Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 4 large eggs
- 2 cups whole milk
- 1/2 cup water
- 2 tablespoons unsalted butter, melted
- 1 teaspoon lemon zest
- 1/2 teaspoon vanilla extract
- For the Filling:
- 1 1/2 cups fresh raspberries
- 1/4 cup granulated sugar
- 1 cup heavy cream
- 1 tablespoon powdered sugar
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
- For Garnish:
- Fresh raspberries
- Powdered sugar
- Lemon zest
Instructions:
In a large mixing bowl, whisk together the flour, sugar, and salt
In another bowl, whisk together the eggs, milk, water, melted butter, lemon zest, and vanilla extract
Gradually pour the wet ingredients into the dry ingredients, whisking constantly until the batter is smooth
Let the batter rest for 15-20 minutes
Heat a non-stick skillet over medium heat and lightly grease it with butter or cooking spray
Pour a small amount of batter into the skillet, swirling it around to evenly coat the bottom
Cook for about 2 minutes or until the crepe is set and the edges start to lift
Carefully flip the crepe and cook for an additional 1-2 minutes on the other side
Repeat with the remaining batter, stacking the crepes on a plate as you go
You should have about 15-18 crepes
For the raspberry filling, combine fresh raspberries and granulated sugar in a bowl
Mash them together with a fork until well mixed and slightly mashed
In a separate bowl, whip the heavy cream, powdered sugar, lemon zest, and vanilla extract until stiff peaks form
To assemble the crepe cake, place one crepe on a serving platter
Spread a thin layer of raspberry filling over it, followed by a layer of whipped cream
Repeat this process, stacking the crepes and alternating between raspberry filling and whipped cream
Once all the crepes are stacked, garnish the top with fresh raspberries, powdered sugar, and lemon zest
Refrigerate the crepe cake for at least 2 hours to allow it to set before serving
