Chocolate Pudding Ice Cream Bars with White Chocolate Shell
Ingredients:
- 2 cups chocolate pudding homemade or store-bought
- 1 cup heavy cream
- 1 cup white chocolate chips
- 1/4 cup coconut oil
- Popsicle molds
- Popsicle sticks
Instructions:
In a mixing bowl, combine the chocolate pudding and heavy cream until smooth
Pour the pudding mixture into popsicle molds, leaving a little space at the top for the white chocolate shell
Insert popsicle sticks into each mold and freeze until solid, about 4-6 hours or overnight
Once the ice cream bars are frozen solid, prepare the white chocolate shell by melting the white chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals until smooth
Carefully remove the ice cream bars from the molds
Dip each ice cream bar into the melted white chocolate shell, allowing any excess to drip off
Place the dipped ice cream bars on a parchment-lined baking sheet and return them to the freezer to set the white chocolate shell, about 10-15 minutes
Once the white chocolate shell is set, the ice cream bars are ready to enjoy
