One Dish Chicken, Black Beans, and Rice
This one-dish chicken, black beans, and rice recipe is perfect for a quick and easy weeknight dinner. Its flavorful, filling, and requires minimal cleanup, making it a great option for busy evenings.
Ingredients:
- 1 cup rice
- 1 can black beans, drained and rinsed
- 2 boneless, skinless chicken breasts, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- Chopped fresh cilantro for garnish optional
Instructions:
Warm up the olive oil in a big pan over medium-low heat
It will take about 5 to 7 minutes of cooking after adding the diced chicken until it turns brown
Put the bell pepper, onion, and garlic in the pan
It will take about 5 minutes of cooking until the vegetables are soft
Add the chicken broth, cumin, chili powder, salt, and pepper, and then stir in the rice and black beans
Once the mixture starts to boil, turn down the heat
Cover and cook on low heat for about 20 minutes, or until the rice is done and the liquid is absorbed
When the rice is done, use a fork to fluff it up, and if you want, you can add chopped cilantro on top
