Creamy Caprese Quinoa Bake

Enjoy the tasty Creamy Caprese Quinoa Bake, which combines Italian flavors with healthy quinoa. Cherry tomatoes, fresh mozzarella, basil, and a creamy base make this dish comforting. Its a great one-dish meal for any event.

Ingredients:

  • 1 cup quinoa, rinsed and drained
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella balls
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup basil leaves, chopped
  • 3 cloves garlic, minced
  • 1 1/2 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions:

Warm the oven up to 190C 375F

Put the quinoa, cherry tomatoes, mozzarella balls, Parmesan cheese, basil, and minced garlic in a baking dish

Mix vegetable broth and heavy cream in a different bowl

Add pepper and salt

Make sure everything is well mixed before pouring the liquid mixture over the quinoa mixture in the baking dish

Wrap the dish in foil and bake it in a hot oven for 30 minutes

Take off the foil and bake for another 15 minutes, or until the quinoa is fully cooked and the top is golden brown

Let the dish cool down a bit before you serve it

If you want, you can add more basil leaves and Parmesan cheese as a garnish

Enjoy while still warm
