Authentic Gazpacho
This authentic gazpacho recipe captures the essence of traditional Spanish cuisine with its fresh, vibrant flavors. Its the perfect dish for a hot summer day, refreshing and satisfying.
Ingredients:
- 6 ripe tomatoes
- 1 cucumber
- 1 green bell pepper
- 1 small onion
- 2 cloves garlic
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- 2 cups cold water
- Sliced bread for serving
- Optional: garnish with chopped fresh herbs like parsley or cilantro
Instructions:
Dice the tomatoes, cucumber, bell pepper, and onion
Mince the garlic cloves
In a blender, combine the diced vegetables, minced garlic, olive oil, red wine vinegar, salt, and pepper
Blend until smooth
Slowly add the cold water to the blender while continuing to blend until desired consistency is reached
Taste and adjust seasoning if necessary
Transfer the gazpacho to a pitcher or large bowl and refrigerate for at least 1 hour to chill
