Fluffy Pancakes
For breakfast or brunch, these fluffy pancakes made from scratch are a great choice.
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 egg
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla extract
Instructions:
In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt
In another bowl, beat the egg and mix it with the buttermilk, melted butter, and vanilla extract
Combine the wet and dry ingredients, mixing until just combined
Do not overmix; some lumps are okay
Heat a non-stick skillet or griddle over medium-high heat and lightly grease it with butter or cooking spray
Pour 1/4 cup of pancake batter onto the hot skillet for each pancake
Cook until bubbles form on the surface, then flip and cook the other side until golden brown
Serve immediately with your favorite toppings, such as maple syrup, fresh berries, or whipped cream
