Quinoa Salad with Lemon-Tahini Dressing
This Quinoa Salad with Lemon-Tahini Dressing is a refreshing and nutritious dish packed with protein, fiber, and vitamins. The combination of quinoa and fresh vegetables provides a satisfying meal, while the zesty lemon-tahini dressing adds a burst of flavor.
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup tahini
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions:
In a saucepan, bring water to a boil
Add quinoa, reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and quinoa is tender
Remove from heat and let it cool
In a large bowl, combine cooked quinoa, bell pepper, cucumber, cherry tomatoes, red onion, parsley, and mint
In a small bowl, whisk together tahini, lemon juice, olive oil, garlic, salt, and pepper to make the dressing
Pour the dressing over the quinoa salad and toss until everything is well coated
Serve immediately or refrigerate for later
