Vancouver Concert Trip Vegan Delight
This Vancouver Concert Trip Vegan Delight is a wholesome and flavorful dish packed with protein, fiber, and nutrients. Its perfect for fueling up before or after a concert, providing you with energy to dance the night away.
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 cup canned black beans, drained and rinsed
- 1 avocado, diced
- Juice of 1 lime
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
Instructions:
Rinse the quinoa well with cold water and let it drain well
Bring water to a boil in a medium-sized pot
Turn down the heat, add the quinoa, cover, and let it simmer for 15 to 20 minutes, or until the quinoa is fluffy and all the water is absorbed
Warm up the olive oil in a big pan over medium-low heat
Put in the garlic and onion, and cook until the onion is clear
Zest, chop, and add cherry tomatoes, red and yellow bell peppers
Cook the vegetables until theyre soft but still have some crunch
Add the black beans and cooked quinoa and mix well
Cook for another 5 minutes, stirring every now and then
Take it off the heat and slowly mix in the avocado dices and lime juice
Add pepper and salt to taste
Before you serve, sprinkle with fresh cilantro
