Southwestern Chicken Corn Chowder

Ingredients:
- 1 lb cooked chicken, shredded
- 1 can 15 oz whole kernel corn, drained
- 1 can 15 oz cream-style corn
- 1 cup diced red bell pepper
- 1 cup diced onion
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 1/2 cup heavy cream
- 1/4 cup all-purpose flour
- 2 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 1 cup shredded cheddar cheese for garnish
- Fresh cilantro for garnish
Instructions:
In a large pot, heat vegetable oil over medium heat
Add diced onion, red bell pepper, and minced garlic
Saut until vegetables are tender
Sprinkle flour over the vegetables and stir well to create a roux
Gradually whisk in chicken broth, milk, and heavy cream until the mixture is smooth
Stir in shredded chicken, whole kernel corn, cream-style corn, ground cumin, chili powder, smoked paprika, salt, and pepper
Simmer the chowder over medium-low heat for 20-25 minutes, stirring occasionally
Adjust seasoning if needed and serve hot, garnished with shredded cheddar cheese and fresh cilantro
