Paleo Broccoli Salad with Avocado Dressing
This satisfying and nutrient-dense Paleo broccoli salad with creamy avocado dressing is ideal for a light meal. Tightly packed with nuts, avocado dressing, and fresh vegetables, its a perfect complement to any Paleo diet.
Ingredients:
- 4 cups broccoli florets
- 1/2 red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chopped almonds
- 1/4 cup dried cranberries
- 2 ripe avocados
- 1/4 cup coconut milk
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
