Paleo Broccoli Salad with Avocado Dressing

This satisfying and nutrient-dense Paleo broccoli salad with creamy avocado dressing is ideal for a light meal. Tightly packed with nuts, avocado dressing, and fresh vegetables, its a perfect complement to any Paleo diet.

Ingredients:

  • 4 cups broccoli florets
  • 1/2 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped almonds
  • 1/4 cup dried cranberries
  • 2 ripe avocados
  • 1/4 cup coconut milk
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

The broccoli florets, cherry tomatoes, red onion, chopped almonds, and dried cranberries should all be combined in a big bowl

Ripe avocados, coconut milk, olive oil, fresh lemon juice, minced garlic, salt, and pepper should all be combined in a blender

Process until a creamy dressing is achieved
