Grilled Polenta Avocado Rounds with Guacamole

The smoky, crispy polenta and creamy, tangy guacamole in these Grilled Polenta Avocado Rounds with Guacamole go really well together. They are great as an appetizer or as a party snack.

Ingredients:

  • 2 ripe avocados, peeled, pitted, and mashed
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeo pepper, seeded and minced
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 4 slices of cooked polenta, about 1/2 inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional
  • Lime wedges for garnish

Instructions:

In a bowl, combine mashed avocados, red onion, minced garlic, jalapeo pepper, lime juice, and chopped cilantro

Mix well

Season the guacamole with salt and pepper to taste

Adjust lime juice and seasoning as needed

Set aside

Preheat your grill to medium-high heat

Brush both sides of the polenta slices with olive oil and sprinkle with chili powder, cumin, paprika, and cayenne pepper if using

Grill the polenta slices for about 3-4 minutes per side, or until grill marks appear, and they are heated through

Remove the grilled polenta rounds from the grill and let them cool for a minute

Top each polenta round with a generous spoonful of the prepared guacamole

Garnish with lime wedges and extra cilantro if desired

Serve the Grilled Polenta Avocado Rounds with Guacamole immediately as a delicious appetizer or snack
