Chocolate Cupcakes with Cherry Mascarpone Frosting
Ingredients:
- 1 and 1/2 cups all-purpose flour
- 1 and 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 and 1/2 tsp baking powder
- 1 and 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 3/4 cup buttermilk
- 1/4 cup vegetable oil
- 2 tsp pure vanilla extract
- 3/4 cup hot water
- 1 cup fresh or frozen cherries, pitted and chopped
- 8 oz mascarpone cheese
- 1/2 cup powdered sugar
- 1/2 tsp almond extract
- Red food coloring optional
- Chocolate shavings for decoration optional
Instructions:
Warm your oven up to 350 F 175C and put paper liners in a cupcake tin
Add the cocoa powder, baking powder, baking soda, and salt to a large bowl
Use a sieve to mix the ingredients together
Whisk the eggs, buttermilk, vegetable oil, and vanilla extract together in a different bowl until everything is well mixed
Mix the dry ingredients with the wet ones until the batter is smooth
Slowly add the hot water to the batter while mixing it in until it is thin and well mixed
Add the cherry pieces and mix them in
The batter should be about two thirds of the way up each cupcake liner
After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
Take the cupcakes out of the oven and let them cool for a few minutes in the pan
Then, move them to a wire rack to cool completely
Get the cherry mascarpone frosting ready while the cupcakes cool
Spread the mascarpone cheese, powdered sugar, and almond extract out in a bowl and mix them together until they are smooth and creamy
You can make it pink by adding a few drops of red food coloring
Use a piping bag or a spatula to frost the cupcakes with the cherry mascarpone frosting once they are completely cool
If you want, you can decorate the cupcakes with chocolate shavings
